We sell boxes of organic rare breed Soay lamb. Each box contains half a lamb in a variety of cuts and is butchered and prepared locally. This speciality meat is totally organic, high quality and home reared.
Soay sheep are a rare breed, native to the island of St. Kilda. This speciality meat has a unique taste from living on the steep cliffs and sea braes found on Dowlaw Farm, foraging on the coastal heath land and beaches. Dowlaw Farm is 'SOPA' certified and is a 'Scotch Assured Farm' ensuring the highest standards of animal welfare. The lambs are totally untouched until gathering prior to marketing owing to the fact that they shed their own fleeces, are organic and need no usual husbandry practices. They graze extensively on the coastal sea braes as part of a conservation grazing management scheme. Once gathered the lambs are sent to an organically certified abattoir and butcher.
Each box contains half a lamb, with each cut individually wrapped. The boxes are frozen to ensure freshness. We can deliver locally or buyers may collect boxes from Dowlaw Farm, Berwickshire and 'Knowes Farm Shop' by East Linton. We can also arrange to supply carcasses for the restaurant trade. In the future we are considering supplying organic Soay mutton, as there has been some interest shown.
