Very high quality lean meat without a muttony flavour and containing very little cholesterol, having an unusually high ratio of polyunsaturated to saturated fats. The flock is certified as Farm Assured under the Specially Selected Scotch Assured Farm approval system. Presently slaughter is not performed organically hence the meat is sold as 'organically reared meat'.
