The 2011 Hospitality Industry Trust (HIT) Scotland Highland Dinner takes place at the Kingsmills Hotel on 8th September.
Sandy Strang, Scottish journalist and former “Wag of the Year” will be providing the entertainment while Nicky Marr, Moray Firth Radio presenter and Inverness Courier columnist, will be master of ceremonies for the evening.
The evening includes a champagne reception and four-course dinner with each table receiving a bottle of Tomatin whisky, direct from the local distillery.
Last year’s Highland Dinner was a sell-out. The event raised over £12,000 to support HIT Scotland, the charity which aims to improve aspirations and encourage excellence in the Scottish hospitality industry.
Craig Ewan, chair of the organising committee and general manager of the Kingsmills Hotel, said: "The hospitality industry is a huge contributor to the economy and the identity of the highlands.
"As well as supporting HIT Scotland, which has helped a number of hospitality workers in the area, a great night is planned with the opportunity to meet many like-minded people."
Tickets are available at £65 per person. Book here.
This year’s event is being supported by a number of organisations, including the Kingsmills Hotel. The Institute of Hospitality is providing the speaker, drinks supplier Matthew Clark is sponsoring the wine, Tomatin is donating its whisky and wine agent Hatch Mansfield is covering the champagne reception.
Meanwhile, the haggis comes from Perthshire-based Simon Howie. The table centres are by Stephen Seedhouse, with additional costs covered by Inverness Hotels Association.
Inkshop printing is creating the evening’s brochures. Finally, Highland Spring is providing the water.
As well as fundraising through events like the Highland Dinner, HIT Scotland is supported by big names in the industry including Highland Spring, Robert Wiseman Dairies, Caterer.com, Enterprise Rent a Car, Phillips and Brakes Fresh Ideas.
The evening’s menu will comprise:
- Hataki of Scottish Salmon: marinated salmon, seared in black pepper and coriander with a broad bean salad
- Turnip and potato soup
- Haggis ravioli
- Duo of pork belly and cheek: apple compote, caramelised shallots, potato croquette
- Chocolate terrine, Tore raspberries with candied pistachio
