Highlands artisan producer Great Glen Game has developed a new salami to bolster its range of unique charcuterie.

The Venison Salametti is a smaller salami and, like the other Great Glen Game products, is made with pure, sustainably sourced local wild venison.
Director Jan Jacob Baak says: "We are always experimenting with new flavours and products and when we made a smaller salami with a finer structure we instantly knew this would be a hit.
"We are very excited to launch this new product at the Speciality Fine Food Fair in London where we hope it will attract attention from the food buyers."
The Venison Salametti is delicious to eat on its own and the smaller slices makes it ideal to use in cooking and on homemade pizzas.
"The finer structure and ground spices will make this a great addition to our range," says Mr Baak.
Great Glen Game is based at Roybridge in the Highlands and was established by Jan Jacob Baak in 2003.
He started producing smoked venison made with prime cuts of local wild venison and over the years has developed new products such as Chorizo, Pepperoni, different types of Salami and a Bresaola all made with pure wild Scottish venison.
Great Glen Game products are sold in quality outlets across the UK such as Fortnum & Mason, House of Bruar, delis and farm shops.
Venison is a lean product with less fat and fewer calories and lower in cholesterol than beef and pork. It is also high in iron, making venison charcuterie a healthy alternative to the more common pork-based charcuterie.
The Speciality & Fine Food Fair runs from 4-6 September and is set to be the biggest ever and has earned its reputation as the definitive trade event for speciality and artisan food and drink.
