'Unbelievable First Year' for Jack at Castle Terrace

Award-winning Edinburgh chef Dominic Jack has described his first Michelin star as "incredibly rewarding" and spoken about an "unbelievable first year" for the restaurant.

Jack, chef patron of Castle Terrace Restaurant in the capital, was named a recipient of its first Michelin star last week after being tipped by Michelin as a Rising Star earlier this year.

Despite being established for just over a year, the city restaurant has continued to show growth, flair, outstanding customer service and an increasingly ambitious and innovative menu which has seen it awarded with the most coveted accolade in the culinary world.

Castle Terrace's sister restaurant, The Kitchin, retained its Michelin star for the fourth year.

Three new Michelin stars were awarded to Scottish restaurants this year, Castle Terrace Restaurant being the youngest.

Jack said: "It has been an unbelievable first year and every day we learn and progress. I’ve imagined what it must feel like to hold a Michelin star since my early days working in some of the top Michelin restaurants in Paris so it’s incredibly rewarding to have received this recognition.

"The entire team here at Castle Terrace is overjoyed with the news. For me, a Michelin star restaurant is somewhere special and ultimately our guests will take home memories of the high standards of their entire dining experience which we strive towards every day."

Philippe Nublat, who is food and beverage director at Castle Terrace Restaurant and The Kitchin, said: "The support of the entire team has been outstanding, from the vital roles of our front of house team, led by restaurant manager Ross Hunter, to the perfection and dedication of the whole kitchen team.

Dominic Jack champions Scottish local produce and uses his extensive French training to continually push boundaries in the culinary and dining experience. He works passionately with the Scottish seasons, embodying the ‘From Nature to Plate’ philosophy it shares with sister restaurant, The Kitchin.

The chef's experience, drive and knowledge, garnered in some of the world’s most famous Michelin star kitchens, is evident in the restaurant’s carefully crafted menu, offering dishes executed to absolute perfection for every service.

Castle Terrace Restaurant was opened in July last year by Jack and the team behind The Kitchin. Set in the heart of Edinburgh’s Old Town, Jack serves up a menu of Scottish classics with a French influence, using the highest quality, freshest produce Scotland has to offer.

Castle Terrace reflects the same philosophy renowned at The Kitchin - ‘From Nature to Plate’.

The restaurant has built an enviable reputation and has been creating a buzz since it opened, winning its Michelin Rising Star in January 2011 and a plethora of other industry awards.
