Carlyn Johnson (21), of Frankie's Fish & Chips in Brae will join four other finalists at the grand final in London on 17 January, 2012.

The Young Fish Frier Award started in 1995 and was initiated by the directors of Drywite, Kelvin Lee and Briar Wilkinson, in memory of their late father Malcolm Lee, who had always encouraged young people to succeed.

Briar Wilkinson, sales director at Drywite, said: "It is encouraging to see such talented individuals coming through the sector and I wish them all the best as they attempt to carve themselves a career in this exciting industry."

Nikki Hawkins, foodservice and events manager at Seafish, said: "The UK’s fish and chip shops are a national institution and these young friers are the future of the industry, which this award has recognised now for the past 24 years.

"The high standards and quality displayed by the shortlisted finalists for 2012 is testament to the way that they have successfully shown a positive attitude in their career, allied with confidence in their own abilities.

"This year’s competition was the tightest yet with each of the finalists fully deserving of their place among the top five."

With over 250 million fish and chip meals sold each year from over 10,500 shops across the UK, fish and chips remains the nation’s favourite takeaway.

Devotees can tuck into their fish and chips knowing that they contain 36% less calories than a chicken korma and pilau rice, and 42% less fat than a doner kebab with pitta and salad.

Recent studies also showed that fish and chips had the lowest salt content of all the takeaways tested.
