Scottish-born Billy joins Jeff Bland’s team at the Michelin-starred fine-dining restaurant from Wilde Thyme Event Catering.

Billy knows number one well having spent four years perfecting his skills as a Sous Chef at the restaurant under the tutorage of Jeff Bland between 2006 and 2010.

His dedication to achieving excellence is reflected in his numerous accolades including, most recently, a Jacquart Rising Star Trophy in 2010 and as the winner of two Young Chef Young Waiter Awards in 2005 and 2006 respectively.

Billy began his career in Pitlochry, Perthshire as Commis Chef at Scotland’s Hotel after gaining a SVQ in Hospitality at Glenrothes College.

He quickly worked through the ranks to Chef de Partie and Senior Chef de Partie at various restaurants including Ballathie House Hotel in Perthshire and Restaurant Martin Wishart in Edinburgh before joining The Balmoral as Sous Chef in 2006.

Billy will work closely with Jeff Bland, who oversees The Balmoral’s team of 36 chefs spread over four restaurants and bar outlets.
