Showcasing the finest Scotch beef, lamb and pork, the annual Scotch Premier Meat Christmas Carcase Show is celebrating its 25th anniversary and attracts buyers from across Scotland, the UK and further afield.
The main event will be a deadweight competition and auction, where top-class butchers from across the UK compete to buy the carcase champion.
Mr Lochhead said: "I am delighted to open today's Christmas Carcase Show, which is rightly recognised as one of the most important meat industry events in the UK.
"The livestock sector is hugely important to rural Scotland, providing crucial jobs in remote areas and making a significant contribution to Scotland’s primary food production and economy as a whole.
"Demand for local food has remained high through these challenging economic times which is a huge vote of confidence in the quality of the product, as demonstrated by a 16 per cent increase in Scotch beef sales since 2007.
"I believe there is a bright future ahead for meat production in Scotland and we will continue to support the red meat industry to help it achieve further growth."
The carcase show is part of a two-day event, which includes a pedigree livestock event at ANM's Thainstone Centre on Tuesday.
