Tom is well known for his support of local produce and his commitment is carried through in his renowned restaurant and hotel, the Monachyle MHOR in Balquhidder, Perthshire.

Says Tom: "Fresh, local produce is the best and it can add profit to your bottom line. I really believe in what East Lothian are trying to do and I am happy to support them at the Fresh Profit from East Lothian Event.

"I encourage chefs from all types of restaurants to buy local when they can and hope that they will come along to the event to meet and speak with East Lothian producers."

The Fresh Profit from East Lothian event will take place on Monday, 12th March at the Sheraton Hotel in Edinburg. It is aimed at persuading and encouraging restaurants and hotels to buy local produce.

Fiona Edgar, business growth officer at East Lothian Council, comments: "It has been well researched that restaurants can profit from purchasing good local produce.

"The produce is fresh and tastier than the majority of mass-produced goods, generally has less environmental impact through reduced carbon foot print and can provide a great point for menu differentiation."

Fresh Profit from East Lothian’s event programme will include demonstrations from well-know chefs, the opportunity for purchasers and chefs to speak directly with the producer and a chance to ‘taste the difference’ between fresh and local and alternative products.

In these challenging times, East Lothian Council, through the work undertaken by the Economic Development Division, is actively supporting local businesses.

Now in its seventh year, the East Lothian Food and Drink initiative is an ongoing programme to highlight the superb range of local food and drink available in the county and to promote its use within hospitality businesses.

Raising awareness is another key strand and this is achieved through various mediums including articles in food magazines/press and attendance by local food companies under the brand East Lothian Food & Drink at high-profile consumer events such as the BBC Good Food Show in Glasgow and Taste in Edinburgh.

East Lothian Food & Drink also actively works in promoting business-to-business initiatives with events such as Fresh Profit from East Lothian.

The East Lothian Food & Drink directory is a key part of the strategy and aims to reconnect people with good local food and drink. The directory includes a comprehensive eating out section.
