In celebration of Scotland’s connections with India, award-winning chef Tony Singh, who is known for his fresh and innovative approach to food, has created a fusion menu using some of the Scotland’s best produce and authentic Indian spices and styles.

It’s the time of year when Scots and Scots at heart are getting ready to toast a dram in honour of Scotland’s national Bard.

However, another literary great is also celebrating an anniversary this year, as India marks the 150th anniversary of great poet Rabindranath Tagore.

Like Robert Burns, Tagore was an icon of Indian culture. A poet, philosopher, musician, writer and educationalist, he was inspired by Scotland’s national poet, with the world-famous Auld Lang Syne inspiring his own well-known song, ‘Purano shei diner kotha’ (memories of the Good Old Days).

Tony Singh, of Oloroso in Edinburgh, said: "As a Scot myself and a lover of all things food and drink, Burns Night is a date on the calendar I always look forward to.

"Scotland is home to some of the best produce in the world so it's no surprise that people across the globe will be cooking up a Burns supper next Wednesday to toast our national bard.

"The outstanding quality of the produce also means it lends itself to any cuisine so as we also raise our glasses to Rabindranath Tagore it seemed appropriate to design a Burns menu which combines fresh Scottish produce with Indian flavour.

"Like Tagore and Burns, you can draw many comparisons between Scots and Indians - we both love a tipple and a good laugh and, like Indian food, haggis has always had a spice to it so the flavour combinations naturally work well together.

"I hope people enjoy cooking up these dishes as they raise a glass to Oor Rabbie and India's own Tagore."
