Adam joins Ducks from The Balmoral, one of Scotland’s five-star hotels. He has considerable experience in the sector and leaves The Balmoral where he was head of in room dining, a tough and challenging role.
During his time there Adam has developed his career, working in all of the food and beverage departments including the famous Palm Court with its sensational afternoon teas and Bollinger Bar.
Adam has won various scholarship awards from the Hospitality Industry Trust Scotland.
Commenting on Adam’s appointment, owner of Ducks and head of the Edinburgh Restaurateurs Association, Malcolm Duck said: "We really want to take Ducks to the next level and to this end Adam joins us as restaurant manager. He has already made a big and positive impact in his first few weeks."
This appointment heralds the nearing of the end of a long period of change for Ducks at Kilspindie. Much work has been done to the property since Malcolm Duck took it over. It is now settled into a small cosy room with only nine tables and is much more reminiscent of the original in Edinburgh.
Meanwhile, the Bistro, Donald’s, is in an elegant redesigned space and caters for a more relaxed dinner. Ducklings, the newest addition, is a coffee shop which also offers takeaway bacon rolls, coffee and soups.
