Health is a major driver of innovation within the food and drink industry as consumers increasingly demand healthy and at the same time convenient and tasty products. Due to the concern of diet-related diseases, consumers increasingly check sugar levels on packages and limit their sugar intake, as they see sugar as their greatest health concern.

Consequently, the government will introduce a sugar tax for high sugar soft drinks in April 2018 with the aim to improve the current diet in the UK. Additionally, food and drink manufacturers in the UK aim to reduce their sugar content in processed food by 20% between 2016 and 2020, which makes sugar the major focus in the food and drink industry.
